FAKE-ME-OUT CRAB



Be honest with yourself.

Yield: 2 servings


You won’t be after you make these wonderful cakes. It’s homemade, and filled with crab meat.

When you make them yourself, you know it will be hearty and healthy.


2 cups imitation crab

2 cloves garlic, minced

1/2 cup chopped parsley

1 (8-ounce) package cream cheese, softened

1/4 cup green onions, thinly sliced

1/4 cup sherry

1 tablespoon capers (optional)

Salt and pepper, to taste

Rice or pasta, to serve


Break apart crab into small pieces.


Warm a large nonstick skillet over medium-high heat, and add crab, garlic and parsley. Add cream cheese, green onions, sherry, capers, salt and pep- per, and cook, stirring constantly, until mixture simmers. Eat as is, or serve hot over rice or pasta.


Very yummy.
